Description

This Bang Bang Fried Rice brings together golden chicken, crisp-tender veggies, and bold, creamy bang bang sauce for a dish that’s sweet, spicy, and crave-worthy. Perfect for weeknights, leftovers, or impressing with minimal effort. It’s a skillet meal that punches above its weight in flavor.


Ingredients

3 cups cooked jasmine or basmati rice (preferably day-old)

1 lb boneless, skinless chicken thighs or breasts, cubed

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cloves garlic, minced

2 tablespoons soy sauce

2 tablespoons sesame oil (or any neutral oil)

For the Bang Bang Sauce:

1/3 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon honey


Instructions

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through. Remove and set aside.
  2. In the same skillet, add remaining oil and garlic. Sauté until fragrant, about 30 seconds.
  3. Add mixed vegetables and stir-fry for 3–4 minutes until tender.
  4. Add rice, pressing it down to crisp for 1 minute before stirring. Repeat for added texture.
  5. Return chicken to the skillet. Add soy sauce and mix everything together.
  6. Stir in bang bang sauce. Let everything heat through for 1–2 minutes.
  7. Serve hot, garnished with green onions or sesame seeds if desired.
