Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1 cup powdered sugar
1/2 cup chopped walnuts
1/2 cup chopped pistachios
2 tablespoons honey
1/2 teaspoon ground cinnamon
2 tablespoons honey
2 tablespoons chopped pistachios
Instructions
1. Cream together butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla extract and beat until combined.
2. Add flour, salt, cinnamon, and nutmeg. Mix until dough forms. Wrap and chill for 30 minutes.
3. Roll out chilled dough and cut into circles using a cookie cutter. Place on a baking sheet lined with parchment paper.
4. Bake at 350°F (175°C) for 10–12 minutes or until edges are golden. Cool completely on a wire rack.
5. In a bowl, beat cream cheese and butter until smooth. Add vanilla and powdered sugar. Mix until fluffy. Transfer to piping bag.
6. Pipe filling onto half of the cookies, then top with the remaining cookies to form sandwiches.
7. Combine walnuts, pistachios, honey, and cinnamon in a bowl.
8. Spoon nut mixture over each cookie sandwich. Drizzle with extra warmed honey and sprinkle chopped pistachios (optional).
9. Serve immediately or chill until ready to enjoy.
Notes
For a richer nut flavor, lightly toast the nuts before mixing with honey.
Make sure cookies are completely cool before assembling to avoid melting the filling.
If the cream filling is too soft, chill it for 10–15 minutes before piping for better structure.
