Ingredients
4 day-old croissants
0.5 cup almond flour
0.25 cup unsalted butter softened
0.33 cup powdered sugar plus extra for dusting
1 large egg
0.5 teaspoon almond extract
0.5 cup water
0.5 cup granulated sugar
0.33 cup sliced almonds
Instructions
1. Prepare the almond cream filling: Beat together butter, powdered sugar, almond flour, egg, and almond extract until smooth.
2. Make the simple syrup: Combine water and sugar in a pan over heat until dissolved. Let cool.
3. Slice croissants: Cut them in half horizontally with a serrated knife.
4. Brush with syrup: Apply syrup inside and outside using a pastry brush.
5. Fill croissants: Spread almond cream inside, close, then spread more on top.
6. Top with almonds: Sprinkle sliced almonds generously.
7. Bake: Bake at 350°F (175°C) for 15 minutes until golden.
8. Finish: Dust with powdered sugar and serve warm or at room temperature.
