Ingredients

12 oz penne pasta

1 lb ground beef

1 packet taco seasoning

1 cup canned black beans (drained and rinsed)

1 cup corn kernels

1 can diced tomatoes (14.5 oz, undrained)

2 cups shredded cheddar cheese

1/3 cup chopped green onions (for topping)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.

2. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, about 8–10 minutes. Drain and set aside.

3. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.

4. Add taco seasoning to the beef and stir to combine.
