This Baked Sweet and Sour Chicken is an easy, healthier version of a classic takeout favorite. Oven-baked chicken bites are coated in a tangy, sweet sauce and tossed with colorful bell peppers. It’s flavorful, satisfying, and perfect for a weeknight meal or weekend gathering.
Ingredients
1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
3/4 cup cornstarch
2 large eggs, beaten
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/2 cup brown sugar
1/3 cup apple cider vinegar
1/3 cup ketchup
2 tbsp soy sauce
1/2 tsp garlic powder
1 tbsp oil (for sautéing peppers)
Instructions
- Preheat oven to 375°F (190°C).
- Dredge chicken pieces in cornstarch, then dip into beaten eggs.
- Arrange coated chicken on a greased or lined baking sheet.
- Bake for 20-25 minutes, flipping halfway until golden and crisp.
- In a saucepan, combine brown sugar, vinegar, ketchup, soy sauce, and garlic powder. Simmer 5-7 minutes.
- Sauté chopped bell peppers in oil until just tender.
- Transfer chicken and peppers to a baking dish, pour sauce over, and toss to coat.
- Bake for an additional 10-15 minutes.
- Let rest a few minutes before serving with rice or noodles.
