Ingredients

4 medium Yukon Gold or Russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

¼ cup grated parmesan cheese

2 tablespoons chopped fresh chives

Sour cream for serving (optional)


Instructions

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.

2. Slice the potatoes into ¼-inch thick rounds using a mandoline or sharp knife. Keep the thickness consistent.

3. In a large bowl, toss the slices with olive oil, garlic powder, salt, and pepper until evenly coated.

4. Arrange the slices in a single layer on the baking sheet, without overlapping.

5. Bake for 20 minutes. Flip each slice with tongs, then bake another 15–20 minutes until golden and crispy.

6. Remove from oven and immediately sprinkle with grated parmesan.

7. Garnish with fresh chives and serve with sour cream, if desired.

Notes

To prevent sticking and ensure even browning, always line your baking sheet with parchment or a silicone mat.

Flip the slices carefully with tongs—this helps keep them intact while crisping both sides.

For added depth, try mixing in a pinch of smoked paprika or cayenne with the seasoning.
