Ingredients

2 ripe avocados, diced

1 (5 oz) can tuna in water or olive oil, drained

1 cup corn kernels (fresh, canned, or thawed from frozen)

1 cup chopped tomatoes (grape or cherry preferred)

1/4 cup chopped fresh cilantro (or parsley)

Juice of 1 lime (plus more to taste)

Salt and pepper, to taste


Instructions

  1. Cut avocados in half, remove pits, dice, and place in a bowl. Drizzle with lime juice.
  2. Add drained tuna and gently fold into the avocado.
  3. Stir in corn, tomatoes, and chopped cilantro.
  4. Season with salt and pepper to taste.
