Ingredients

2 medium apples, peeled and diced

1 1/2 cups all-purpose flour

1/3 cup granulated sugar

2 tablespoons brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

3/4 cup milk

1 large egg

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

1/2 cup powdered sugar, for dusting

1/2 cup powdered sugar, for glaze (optional)

1 to 2 tablespoons milk, for glaze (optional)


Instructions

1. Peel, core, and dice apples into small chunks. Sauté in a skillet with a little butter and cinnamon until slightly softened. Let cool.

2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg.

3. In a separate bowl, whisk milk, egg, vanilla extract, and melted butter until smooth.

4. Combine the wet mixture with the dry, then gently fold in the cooled apples.

5. Preheat and lightly grease your waffle iron. Spoon in the batter and cook until golden brown, about 3 to 4 minutes per batch.

6. Let cool slightly on a wire rack. Drizzle with glaze if desired and dust with powdered sugar before serving.
