Description

This Amish Winter Bliss Casserole is the ultimate cold-weather comfort dish, filled with tender potatoes, sweet carrots, green beans, and savory ground beef in a rich, flavorful sauce. It’s hearty, wholesome, and perfect for cozy family dinners.

Ingredients

1 ½ pounds ground beef

4 medium Yukon Gold or red potatoes, peeled and chopped

3 large carrots, sliced

1 ½ cups green beans, trimmed

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste or ½ cup tomato sauce

1 cup beef broth

1 teaspoon paprika

1 teaspoon Italian seasoning

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.

3. Add diced onion and minced garlic to the skillet; sauté until soft and fragrant, about 3-4 minutes.

4. Stir in tomato paste, paprika, Italian seasoning, salt, and pepper.

5. Pour in beef broth and simmer for 5–7 minutes to allow flavors to meld.

6. While meat simmers, peel and chop potatoes and slice carrots. Trim green beans.

7. In a greased 9×13″ baking dish, layer the potatoes, carrots, and green beans.

8. Pour the meat mixture over the vegetables and stir gently to combine.

9. Cover tightly with foil and bake for 45–50 minutes, or until vegetables are tender.

10. Remove foil and bake an additional 10 minutes to lightly brown the top.

11. Let rest for 5 minutes before serving.

Notes

Make sure to chop vegetables evenly to ensure even cooking.

For extra richness, add a sprinkle of shredded cheese in the last 10 minutes of baking.

Let the casserole sit for 5–10 minutes after baking for easier slicing and serving.
