Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/4 cups all-purpose flour
3/4 cup finely ground almonds
1/4 teaspoon salt
powdered sugar for dusting
Instructions
1. Cream the softened butter and powdered sugar together in a large bowl until light and fluffy.
2. Add the vanilla and almond extracts and mix until well combined.
3. Stir in the flour, ground almonds, and salt until a soft dough forms. Avoid overmixing.
4. Wrap the dough in plastic wrap and chill in the fridge for at least 30 minutes.
5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
6. Shape dough into small logs and bend into crescents. Place evenly on the baking sheet.
7. Bake for 12–15 minutes or until the bottoms are lightly golden while tops remain pale.
8. While warm, dust generously with powdered sugar. Let cool completely on a wire rack.
Notes
Chill the dough fully to help cookies hold their shape during baking.
Toast the almonds before grinding for an extra layer of nutty flavor.
