Ingredients

4 boneless skinless chicken breasts

1 teaspoon seasoning salt

½ teaspoon black pepper

1 tablespoon olive oil

6 slices thick-cut bacon, chopped

1 cup fresh mushrooms, optional

1 ½ cups shredded Colby Jack cheese

¼ cup honey

2 tablespoons Dijon mustard

¼ cup mayonnaise


Instructions

1. Preheat oven to 375°F.

2. In a bowl, whisk together honey, Dijon mustard, and mayonnaise until smooth. Set aside a portion of the sauce for serving.

3. Season chicken breasts with seasoning salt and pepper.

4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken on both sides until golden. Do not cook through.

5. In the same skillet (or separately), cook chopped bacon until crispy. Remove and set aside.

6. If using, sauté mushrooms in the bacon drippings until tender.

7. Brush chicken breasts with the honey mustard sauce.

8. Top with sautéed mushrooms (optional), shredded Colby Jack cheese, and bacon.

9. Transfer skillet to oven and bake 15–20 minutes, or until internal temp reaches 165°F and cheese is melted and bubbly.

10. Drizzle reserved honey mustard sauce over chicken before serving.

Notes

Use an oven-safe skillet to save time transferring from stove to oven.

For crispier bacon texture, sprinkle some over the chicken right before serving.

Make the honey mustard sauce ahead to deepen the flavor—it keeps in the fridge for 3 days.
