Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
2 garlic cloves, minced
2 celery stalks, sliced
3 carrots, sliced
1 ½ cups baby potatoes, diced
4 cups low-sodium vegetable broth
1 teaspoon turmeric
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 zucchini, chopped
2 cups kale or spinach, chopped
¼ cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large soup pot over medium heat.
2. Add the diced onion, garlic, celery, and carrots. Sauté for 5-6 minutes until the vegetables are softened and aromatic.
3. Add the diced baby potatoes and pour in the vegetable broth. Stir in turmeric, salt, and pepper. Bring to a boil.
4. Reduce the heat to a simmer and cook uncovered for 10-12 minutes, or until the potatoes are fork-tender.
5. Stir in the zucchini and chopped kale or spinach. Simmer for another 5-7 minutes until the vegetables are tender and the greens are wilted.
6. Taste and adjust seasoning as needed.
7. Stir in fresh parsley right before serving.

Notes
Add chickpeas or white beans for a more filling version.
Swap kale with spinach or Swiss chard if you prefer a milder green.
