Ingredients
2 boneless skinless chicken breasts
1 cup panko bread crumbs
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
1⁄2 teaspoon black pepper
2 large eggs
1 tablespoon olive oil spray or light brush of oil
Instructions
1. Slice the chicken breasts horizontally or pound them to about 1⁄2-inch thickness for even cooking.
2. In a bowl, whisk the eggs. In a separate bowl, combine panko, paprika, garlic powder, salt, and pepper.
3. Dip each chicken piece in the egg, then press it into the seasoned panko mixture until fully coated.
4. Lightly spray or brush your air fryer basket with oil and preheat to 390°F for 3 minutes.
5. Place chicken in a single layer in the basket. Spray the tops with oil and cook for 7–8 minutes per side until golden and the internal temp reaches 165°F.
6. Let chicken rest for 2–3 minutes before serving to lock in juices.
Notes
Press the chicken firmly into the breadcrumbs to prevent coating loss during cooking.
Letting the coated chicken rest a few minutes before air frying helps the crust adhere better.
Always check doneness with a meat thermometer to ensure juicy, safe-to-eat chicken.
